    Ingredients: 

    • 150g plain flour (more than 1 cup)
    • 150g jumbo porridge oats
    • 1 tsp cinnamon
    • 11⁄2 tsp baking powder
    • 150g mixed dried fruit (cranberries, sultanas, raisins, blueberries, chopped-up apricots, or figs)
    • 150g brown or muscovado sugar
    • 100g mixed seeds and nuts
    • 2 medium eggs, beaten
    • 150g unsalted butter, melted and cooled
    • 2 tbsp. Golden syrup or honey

    Directions:

    • Preheat the oven to 180°C/400°F and set aside. Line a 20x30cm baking sheet with parchment paper.
    • In a large mixing bowl, take the flour, cinnamon, baking powder, sugar, oats, dried fruit, and seeds, then add the liquid ingredients. Combine thoroughly.
    • Spoon the mixture into the pan and spread it evenly with a spatula.
    • Bake for around 20-25 minutes or until the top is firm.
    • Allow cooling in the tin before slicing into 16-18 bars, making larger or smaller slices depending on your hunger levels.
    • Don’t let any air get in the tin.

    How to Store Leftover Fruit Oat Bar:

    These Fruit and Oatmeal Bars can be easily stored in an airtight container in the fridge for three days, and they can also be frozen. 

    They also thaw quite quickly. You may also defrost them in the microwave for 20 seconds, or if you include them in your lunch bag in the morning, they will be defrosted by snack time.
